Sausages with White Bean, Cherry Pepper, and Scallion Relish

large sweet or hot Italian sausage links
2 tbsp. olive oil
can small white beans
sweet red cherry peppers (such as Peppadew)
1 tbsp. white wine vinegar
Kosher salt and pepper
- Heat a grill, grill pan, or skillet to medium-high heat. Coat the sausages with 1 tablespoon oil and cook, covered, turning occasionally, until just cooked through, 12 to 15 minutes.
- Meanwhile, in a medium bowl, combine the beans, cherry peppers, scallions, carrot, vinegar, remaining tablespoon oil, and a pinch each salt and pepper.
- Serve the sausages in the rolls and top with the relish.
