Ham, Cheese, and Cauliflower Galette

Using a store-bought pie crust, you can put together this simple, veggie-filled galette in just a few minutes.

small Red Onion
1 tbsp. fresh rosemary
1 tbsp. olive oil
1/2 tsp. Pepper
1/2 oz. Gruyère cheese
thinly sliced deli ham
refrigerated rolled pie crust
- In a large bowl, toss together cauliflower, red onion, and rosemary with olive oil, salt, and pepper.
- Fold in grated Gruyère cheese and deli ham. Working on a piece of parchment paper, roll refrigerated rolled pie crust into a 12-inch circle.
- Slide the paper (and crust) onto a baking sheet. Spoon the cauliflower mixture onto the pie crust, leaving a 2 1/2-inch border around the edge. Fold the border over the mixture.
- Brush the crust with beaten egg and bake at 425 degrees F until the vegetables are tender and the crust is golden brown, 30 to 35 minutes.
