A slow cooker does all the work in this savory stew, which simmers diced ham, lentils, carrots, celery and onion in an oregano-flecked chicken broth and finishes it off with spinach.

1 tsp. dried oregano
Kosher salt and pepper
can condensed chicken broth
2 tbsp. fresh lemon juice
bunch fresh spinach
- In a 5- to 6-qt slow cooker, combine the carrots, celery, garlic, onion, ham, lentils, oregano and 1/4 tsp each salt and pepper.
- Stir in the chicken broth and 4 cups water. Cook covered, on low 6 to 8 hours or on high, 4 to 5 hours.
- When ready to serve, stir in the lemon juice. Fold in the spinach and let warm until just wilted, about 2 minutes.
