Classic Eclairs

Classic Eclairsis a recipe.

Ingredients:

  1. milk 1 cup (250 ml);
  2. butter 100 gr;
  3. flour 150 g;
  4. salt pinch;
  5. eggs 4 pieces.
  6. Custard:
  7. 400 ml of milk;
  8. 2 yolks;
  9. 1.5 tbsp. flour;
  10. 1.5 tbsp starch;
  11. 80 grams of sugar;
  12. vanillin.

Cooking

In the microwave dish, grate the yolks with sugar and vanilla, pour in the milk and add the flour, starch. Mix well to avoid lumps and put in a microwave for 3-5 minutes at maximum power. Be sure: every minute we take out and mix well so that there are no lumps. The density of the cream depends on how much time you will prepare.

Pour milk into the pot, put butter there, a pinch of salt. The butter is melted well and add the sifted flour by constantly mixing, brewing the mass and removing it from the plate. Then beating the mass, add eggs one by one.

Fill the confectionary bag or syringe with a ready-made mass, and squeeze out strips 10 cm long on a baking sheet.Before this baking sheet is covered with baking paper or greased. Leave a distance of 5 cm between the strips. We bake eclairs in a preheated oven at 1800C for 15-30 minutes. Do not open the oven when baking.
